EXPLORATION TECHNOLOGY CURDS CHEESE BASED STUDY OF PATENTS
The present article seeks to analyze the dairy industry based on the study of patents. For this, we used the deposits at INPI - National Institute of Industrial Property. The hypothesis in the study is that the evolution of patent accompany the structural and economic changes currently experienced. The cheese curd is a food of great nutritional, economic and social importance, as it is widely consumed by people of all ages and social classes. For this work the survey of patents, articles, theses and dissertations from the terms was made: cheese production, new products, additives and packaging, using bases INPI, Spacenet, USPTO, CAPES journals, Web of Science databases, Google academic and SciELO. The EU countries have more patent applications in the area of cheese rennet, while Brazil has a great potential related to this segment.
