ESTUDO DA CINÉTICA DE SECAGEM DA PIMENTA MALAGUETA (Capsicum spp) CULTIVADA NO ESTADO DE SERGIPE
The objective of this study was to optimize the drying conditions of chilli and seed. The
mathematical models used to fit the experimental data of drying kinetics, equations were
proposed by Lewis, Brooker, Fick and Waste. The samples were dried at temperatures of 50, 60,
70, 80, 90 e100oC for 60 minutes. Among the models applied shows that the best fit of the
experimental data were to Fick's equations and Waste, which provided results for the
determination coefficients higher than 99% for the temperatures studied. Conclude that both the
fruit and the seeds can be a viable alternative for the production of new products, improving the
economic performance of the beneficiary industries.
