EFFECT OF SODIUM ALGINATE BIOFILM APPLE IN MINIMALLY PROCESSED
This study to evaluate the effect of sodium alginate coating applied to 1% in minimally processed
apples in the form of beads during storage at different temperatures. It was concluded that the
beads with alginate when stored apples, had a retarding the degradation behavior of the natural
product when compared to samples without sodium alginate.
