Approach on Technology Development (Software and Hardware) to Analyze the Risk Factors of Industrial Honey Production Technology
This paper presents the stages of the development of an authorial technology for the control and
management of the honey production chain, capable of: (i) processing the data of natural and logistical conditions that influence the production of honey, to diagnose and predict the factors the risk of the Fermentation bioprocess and the HMF (hydroxymethylfurfural) increase process, through the Big Data technological mechanism; (ii) the automation of the records of honey moisture, relative humidity and room temperature indicators, to relate and integrate into laboratory analyzes and define the ideal conditions for the reduction of risk factors.
