PROSPECÇÃO TECNOLÓGICA COM O ENFOQUE NA PRODUÇÃO E PREPARAÇÕES DE ALIMENTOS COM AROMA E SABOR DE CAFÉ E CACAU
Abstract
The flavor is a concept of sensory analysis that includes at least two phenomena: the savor and aroma. The aroma is in turn determined by the volatile compound feed cognizable by the nose, while the savor is based on sensations associated with gustation. This study aims to identify patents filed that deal with related productions with savor and aroma of cocoa and coffee. The survey was conducted on the basis of Spacenet (EP). We found 757 patents filed in this database. It was observed that in 1972 there were 26 registered patents on the subject searched. The nation that had the highest number of patent applications was the United States with 130 patents filed.
