PHYSICOCHEMICAL CHARACTERIZATION OF NONI SEEDS
Abstract
This study aimed to characterize noni seeds with pulp residues and noni seed without waste pulp as
the physico-chemical parameters. They were determined in the samples pH, titratable acidity,
moisture content, ash, lipids, proteins, starch, total sugars, reducing and non-reducing sugars,
color and water activity. It was found from the parameters evaluated the noni seeds with pulp
residues showed different results seeds without pulp waste with higher moisture content values,
water activity, minerals, acidity, reducing sugars, lipids and brightness. The seeds without pulp
residues showed higher values of protein and starch. Samples with pulp residues are lighter and
with lower redness and yellowness.
