MICROBIOLOGICAL EVALUATION OF CRUSHING BOARDS AND HAMMERS USED FOR CONSUMPTION OF CRAB IN ARACAJU, SERGIPE
Abstract
Crab is consumed using wood hammer and granite crushing board, which when poorly sanitized
can contribute to increase the number of cases of foodborne diseases. Interesting in evaluate the
hygienic sanitary conditions of these crab cracking tools, samples of wood hammer and of granite crushing board were collected at seaside restaurants of Aracaju and were subjected to analysis of
molds and yeasts, aerobic mesophilic bacteria and fecal coliforms. Through this study, it was
possible to conclude that 100% of utensils used to eat crab in some restaurants presented
unsatisfactory hygienic sanitary conditions demonstrating the incorrect cleansing of these tools,
representing thus a risk for consumer health. normally used for research articles, and thus, should
serve as a reference for formatting and presentation.
