INFLUÊNCIA DE AGENTES CLARIFICANTES QUANTO AOS PARÂMETROS COLORIMÉTRICOS E ANÁLISES TÉRMICAS NOS ÓLEOS REFINADOS DE SEMENTE DE MARACUJÁ
Abstract
Clarifiers clays are used in refinery operations of vegetable oils to remove pigments, improving their appearance, odor and flavor. In this study, yellow passion fruit (Passiflora edulis f. flavicarpa Deg.) seeds oil was extracted by mechanical pressing. Passion fruit seeds were dried in a convective dryer under temperature of 70°C. Subsequently, the analysis of stability of refined oil was held for possible changes its color with respect to the types of fining agents, and the thermal analysis oils over a period of 90 days. Regarding the clarification of the oil phase, it can be concluded that the bentonite clay gave better efficiency during the storage period. As for the analysis Thermogravimetric (TGA), derivate thermogravimetric (DTGA) and differential scanning calorimetry (DSC) curves showed that refined oils presented a better thermal stability compared to the standard oil.
