COMPARATIVE STUDY OF CORIANDER (Coriandum sativum L.) OBTAINED IN DRY DIFFERENT DRYING METHODS
Abstract
This research sought to show the various purposes of dehydration in vegetables, obordando the
processes of drying and freeze drying in fixed bed, as well as changes that occur in each product in process. This study aimed to evaluate the influence of freeze-drying processes in fixed bed on the
physicochemical constituents of coriander. The analyzes were performed, moisture, Aw, ash,
acidity, soluble solids, pH, total phenolics and carotenoids. The results show that the two drying
processes altered physicochemical compounds analyzed. However, comparing the two methods only
each other in the dehydration dryer was most efficient in removing water with 6.23% moisture
whereas lyophilization to 8.63%, as compared with maintenance of other constituents lyophilization
attacked less product.
