ANALYSIS OF PROCESS INNOVATION: A STUDY OF SMALL BAKERIES
Abstract
The paper aims to analyze the bakery sector of small businesses attended by the ALI Program
(Local Agents of Innovation) in Natal-RN, delimiting up the four regions (south, north, east and
west), as well as conducting some comparative studies on the measurement of the degree of
innovation processes in this segment. The methodology was exploratory and descriptive, tracing the
profile of entrepreneurs, using innovation radar to identify the sector average in terms of innovation and directing the questions to the processes dimension, and the use of measurement of
the innovation process in the phases: survey, selection, resource definition, implementation and
learning. The results show that, in the processes dimension, the eastern region showed the best
rates on the items surveyed. We conclude that the bakeries assisted by ALI Program are still finding
and themselves on the theme of innovation. The eastern and southern regions are at a level more
noticeable development on the subject, and the northern and western regions still need more
improvement in its processes.
